A Quick how to for our breakfast hash...
Set the immersion circulator. Once at temp, gently put the eggs in and set timer. You can poach the eggs after the hash is done as well. We just have this fancy gadget and therefore it needs to get used. Frankly I find this easier than poaching eggs.
Cook the sausage and remove.
Cook thawed bag of diced potatoes. Salt and pepper to taste. If you don't thaw it they tend to burn on the outside and remain uncooked in the inside. You just have to be gently when stirring them as they can turn to mush if not browned.
Dice bell pepper (and onions if you like. I use onion powder.)
Eggs should be good, but I check on them to make sure none have cracked.
Add sausage back in and finish cooking the potatoes.
Once eggs are ready, put hash in bowl then crack egg over hash. If you are using a sous vide cooker they need to be cracked right away or they will continue to cook outside of the water.
Eat and enjoy.
