First Zoodle Attempt

Last time Hubby went food shopping I noticed he had picked up zucchini which wasn't on the list I made.  They looked good, but it turned out he didn't actually intend to get them.  As in he never actually put them in the cart.  The cashier must have rung up the zucchini from the person behind him at the check out.  Since we paid for them I didn't want them to go to waste.  We decided on making some zucchini noodles or Zoodles as my friend calls them.

Hubby rinsed them off then ran them through a spiralizer.  

In the mean time, I opened a can of dice tomatoes, juice and all, into a large frying pan.  Add a bunch of basil, stir and heat it though.  

Next, add the Zoodles and lightly toss.  Let it cook for 1-2 minutes.  Too much time and they turn to mush.  You want them to still be firm.  

You want to eat it right away.  This is my plate.

This was hubby's.  He doesn't do vegetarian meals, but this was an easy way to make it work for him.  He added left over rotisserie chicken and some meatballs to it.  He also added crushed red pepper and cheese.  

Overall, not a bad meal for something unplanned.  Zoodles will definitely be making its way into our kitchen more and more.

  1. I'm definitely intrigued by these, not sure if Kyle would like them.

    1. Hubby is typically not a fan of things like this but he likes them. Not all the time, but it is a nice change every once in a while.

  2. We eat zucchini a lot but never in Zoodle form. They're so good, even the kiddos like them!
